Ingredients:

  • 3 cups (105g) crispy brown rice cereal

  • 1/2 cup (45g) protein powder (optional, see notes for substitution)

  • 1 cup (45g) freeze-dried blueberries

  • Pinch of salt

  • 3/4 cup (190g) tahini (or nut/seed butter of choice)

  • 1/2 cup (160g) maple syrup or honey

  • 2 tbsp (25g) coconut oil

  • 1 tsp vanilla extract

    Optional White Chocolate Blueberry Ganache Topping:

    • 10 oz (285g) dairy-free white chocolate chips

    • 1/2 cup (70g) frozen wild blueberries

    • 1/3 cup (80g) full-fat coconut milk

Instructions:

  1. In a large mixing bowl, combine the crispy brown rice cereal, protein powder (if using), freeze-dried blueberries, and a pinch of salt.

  2. In a separate bowl, mix tahini, maple syrup or honey, coconut oil, and vanilla extract. Microwave for 30 seconds to melt the coconut oil, then stir until the mixture is smooth.

  3. Pour the wet mixture over the dry ingredients and stir until the cereal is evenly coated.

  4. Press the mixture firmly into an 8 x 8-inch pan lined with parchment paper and refrigerate while preparing the ganache.

  5. For the ganache, defrost the blueberries (using a microwave or on the stovetop for about 90 seconds), then press through a sieve to extract about 2 tablespoons of juice.

  6. Melt the white chocolate chips with the coconut milk, then stir until smooth. Mix in the blueberry juice.

  7. Allow the ganache to cool and thicken for about an hour at room temperature, then pour or spread it over the chilled bars.

  8. Refrigerate for at least 4 hours before slicing. Store any leftovers in the fridge.

Substitution:

If you prefer not to use protein powder, grind about 3/4 cup of additional cereal to a flour-like consistency to make 1/2 cup of cereal powder. This will help bind the treats together more effectively.
