Easy and Authentic Gluten-Free Tortillas

Yields: 8-10 tortillas
Ingredients:
2 cups of gluten-free all-purpose flour (look for a blend that includes xanthan gum, or add 1/4 teaspoon of xanthan gum if your flour blend doesn't include it; this helps with elasticity)
1/2 teaspoon salt
3/4 cup warm water (you may need a bit more to adjust the dough consistency)
2 tablespoons olive oil or vegetable oil
Instructions:
Mix Dry Ingredients: In a large bowl, whisk together the gluten-free all-purpose flour and salt.
Add Wet Ingredients: Make a well in the center of the flour mixture. Add the warm water and oil into the well.
Form the Dough: Using a fork, gradually incorporate the dry ingredients into the wet until a dough begins to form. Once it starts to come together, use your hands to knead the dough in the bowl for a few minutes until smooth. If the dough is too dry, add a little more warm water, one tablespoon at a time, until it reaches a pliable consistency.
Rest the Dough: Cover the dough with a clean kitchen towel and let it rest for 15-30 minutes. This step helps the flour to hydrate and makes the dough easier to handle.
Divide and Roll: Divide the dough into 8-10 equal pieces. Roll each piece into a ball. On a lightly floured surface (use gluten-free flour), roll out each ball into a thin circle, about 6-8 inches in diameter. Keep the work surface and rolling pin lightly floured to prevent sticking.
Cook the Tortillas: Preheat a dry skillet or griddle over medium-high heat. Place one rolled-out tortilla in the skillet and cook for about 1 minute or until you see bubbles forming on the surface and the edges start to curl up slightly. Flip and cook for another 30 seconds to 1 minute on the other side, until it has some brown spots and is fully heated. Repeat with the remaining tortillas, adjusting the heat as necessary to prevent burning.
Keep Warm: Wrap the cooked tortillas in a clean cloth to keep them warm and soft until ready to serve.
