Frozen Yogurt Bark

Ingredients:

  • 2 cups plain or flavored Greek yogurt (use coconut yogurt for a vegan alternative)

  • 2-4 tablespoons honey or maple syrup (adjust to taste)

  • 1 teaspoon vanilla extract (optional, for added flavor)

  • Toppings: Sliced fresh fruits (strawberries, kiwi, banana), berries, chopped nuts (almonds, walnuts), chocolate chips, granola, coconut flakes, dried fruit, or seed mix

Instructions:

  1. Mix the Yogurt Base:

    • In a medium bowl, combine the Greek yogurt with honey or maple syrup and vanilla extract (if using). Stir until well combined and smooth.

  2. Prepare the Baking Sheet:

    • Line a baking sheet with parchment paper. This will prevent the yogurt from sticking and make it easier to break the bark into pieces once frozen.

  3. Spread the Yogurt:

    • Pour the yogurt mixture onto the lined baking sheet. Use a spatula to spread it out into an even layer, about 1/4 inch thick. The shape doesn't have to be perfect, but aim for a roughly rectangular or square shape to make it easier to break into pieces later.

  4. Add Toppings:

    • Sprinkle your chosen toppings over the yogurt, pressing lightly to make sure they stick. Be creative and make patterns if you like, or simply scatter them for a rustic look.

  5. Freeze:

    • Place the baking sheet in the freezer and freeze for at least 4 hours, or until the yogurt is completely firm.

  6. Break into Pieces:

    • Once frozen, lift the parchment paper to remove the bark from the baking sheet. Break or cut the bark into pieces. The size and shape of the pieces are up to you.

  7. Serve or Store:

    • Enjoy the frozen yogurt bark immediately, or store it in an airtight container in the freezer for up to a month. It's a great make-ahead snack for hot days or a healthy dessert option.
