Homemade Spicy Tomato Chutney

Ingredients:

  • 6 tomatoes, halved

  • 3 tablespoons olive oil or avocado oil

  • 1/4 teaspoon salt

  • 6 cloves of garlic

  • 1 red onion, finely chopped

  • 1-2 fresh green chilis, chopped

  • A handful of fresh coriander, chopped

  • Red chili powder, to taste

  • 1/2 teaspoon smoked paprika

  • Juice of 1 lemon

Instructions:

  1. Heat the oil in a frying pan over medium heat. Add the halved tomatoes and garlic cloves, cooking until they are crispy on both sides.

  2. Once cooked, peel the skins off the tomatoes. Mash the peeled tomatoes and garlic in a bowl.

  3. Remove the pan from heat and allow the tomato and garlic mixture to cool.

  4. To the cooled tomato mix, add the finely chopped red onion, green chilis, chopped coriander, red chili powder, smoked paprika, and lemon juice. Stir well to combine all the ingredients.

  5. Taste and adjust the seasoning, adding more salt or chili powder as needed.
