Mushroom Thyme tart

Ingredients:

  • 1 sheet of rectangular puff pastry

  • 2 cups sliced brown mushrooms (or any preferred type)

  • 2 cloves garlic, finely chopped (optional)

  • Olive oil

  • 1 cup grated mozzarella cheese

  • 1 ball of mozzarella, sliced

  • 1 egg yolk

  • 2 tsp fresh thyme

  • Salt and pepper, to taste

  • A handful of fresh parsley, chopped

Instructions:

  1. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.

  2. In a skillet over medium heat, add a drizzle of olive oil. Sauté the mushrooms until golden. Add the chopped garlic if using and cook for another minute. Set aside.

  3. On the prepared baking sheet, brush four circles with olive oil and sprinkle them with pepper. Distribute the grated mozzarella evenly among the circles.

  4. Top each cheese pile with a portion of the sautéed mushrooms and a slice of mozzarella.

  5. Cut the puff pastry into four squares. Place one square over each pile of cheese and mushrooms. Sprinkle fresh thyme over the pastry.

  6. Beat the egg yolk and brush it over the puff pastry. Use a fork to poke a few holes in each pastry square to allow steam to escape.

  7. Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed up and golden brown.

  8. Remove from the oven, let cool slightly, then flip each pastry over to serve.

  9. Garnish with chopped fresh parsley and enjoy warm!
